Cut up fresh side pork in small chunks, fry crisp with salt and pepper, drain.
Peel potatoes and grind, add salt and pepper to taste, add flour until easy to form into ball & hold together while boiling, add small amount of baking powder.
Form into balls (using wet hands to keep from sticking) with fried side pork in the middle of each.
Drop into boiling salted water and cook until done (about 30 minutes).
Serve with butter, half & half, the water you boiled them in or whatever you prefer.
